Chilli baked brie

    Heat the oven to 200°C. Sit the wheel in a small cast iron pan or a snug baking dish.

    Score the top of the rind in a shallow criss-cross so the topping sinks in.

    Bake for 12–15 minutes, until the middle wobbles and the rind puffs.

    Stir the honey and soy through the chilli crisp, then spoon it over the hot wheel so the oil runs into the score marks.

    Scatter the thyme, rest for two minutes, then break the top open at the table with the charred bread.

Peddler's tip

Add the crisp after baking, not before. Oven heat softens the crunch — you want it landing on hot cheese, still loud.
